Eden Sauvignon Blanc 2020
Gooseberry and fine smoke on the nose. Juicy and silky on the palate with apple notes, Cape gooseberries, ripe but vital acidity, citrus fruit, grapefruit, fine phenolic layering. Compact, consistent, elegant, finishes spicy, some allspice and cumin.
- Falstaff
The best grapes from our Sauvignon Blanc vineyard have been allowed to mature in 320L barrels for a year. We rely on old cooperage from Burgundy, which in this case has made a name for itself on the Loire.
We see the ageing in wooden barrels as an opportunity for the wine to become even more delicate and not to absorb wood or roasted aromas. This chance to mature and oxidize does the wine good, for it becomes calmer, deeper and more subtle. It's fun to play in this Garden of Eden.
Blossoms, taut tangerines, ripe passion fruit, subtle creaminess - notes that come together into an elegant harmony that dances across the tongue and then encompasses the entire palate.
The first vintage is limited to 500 bottles.
The 2019 vintage was featured in the anniversary episode of the Röstoff podcast hosted by Peter Smits and Ilona Scholl. From 1:17:00, our friend and sommelier Felix Fuchs spotlights Eden -inspiration is guaranteed.
