As big Chardonnay aficionados, we especially love reductive varieties that perfectly reflect their soils - and preferably soils that hold proper fossils. As we are located on the banks of the Ice Age Rhine, our vines are rooted in precisely these minerals and we have learned to love them since we were children.
With Neverland Blanc, we have created a dynamic connection between the 25-year-old Chardonnay vines and the Traminer and Pinot Gris grape varieties that are important to us. They offer a fine and elegant spectrum on the palate that connects the different tasting notes like a signature. This is accomplished through year-round ecological work in the vineyard, as well as gentle and small-scale manual work during the harvest and the expansion in the cellar. We use barrels that have been specially created by the Tonnelerie in Baune for the fermentation of the grapes, which deliberately bring in very little wood but emphasize our soil.
What is most fascinating about this wine is its evolution once opened. Air, warmth and a decent glass create images on the taste buds that make you forget everything.
